Michelin-starred restaurants in Gran Canaria
A few days ago the most anticipated gala was celebrated on the culinary scene, the Michelin Guide gala where the restaurants that were recognized with the very famed stars in Spain and Portugal were presented.
On the island of Gran Canaria we can already boast of two Michelin stars, one for Los Guayes in Arguineguín and another for La Acuarela, in Mogán. La Acuarela was in charge of organizing our opening cocktail in the presentation of a real estate agency in the Canary Islands in the boutique style, La Boutique · Canary Real Estate.
Gastronomy is something intrinsic to our culture. Thanks to the excellent weather, on the island we go out a lot to taste new dishes while sharing time with our friends and family. From the wrinkled potatoes with mojo or the sancocho we have evolved to the fusion cuisine, novel and surprising that, without losing the link with our roots, it receives the highest recognition of world cuisine.

How do you get Michelin stars?
The restaurants can be featured with up to 3 Michelin stars. Throughout the year, the 12 inspectors working in Spain, trained in hospitality schools, travel the country in search of the best restaurants. Each inspector visits approximately 800 establishments per year and during their stay and tasting they remain totally anonymous. Thanks to this anonymity they ensure that they will receive the treatment of a normal client, that they will not be treated differently because they are sworn in by the Michelin Guide.
What is an inspector set to assess if a restaurant deserves the Michelin star?
The most important thing when evaluating a meal is the quality of the product and that it is cooked in total perfection. The contrast of the flavours, the creativity of the chef and the money value complete the points that are taken into account for evaluation. Michelin stars are awarded only by evaluating what is on the dish, the decoration of the place or comfort is not taken into account, for that the guide has a different type of classification and awards. It primarily takes into account how the dish is made.But a single visit from an inspector does not qualify the restaurant as deserving of a star, at least 4 times it must be visited by inspectors. In the case of restaurants with a second star, they receive 10 visits. For the third star, the highest award, not only do the inspectors of the Michelin Guide of Spain visit it, but French inspectors also travel to the place and the valuation must be unanimous to grant the third star.
A Michelin star is the reflection of creative, careful work and an excellent choice of raw material. While this is good news, these awards are only valid for one year, and restaurants must continue to work hard to renew the award and try to get another climb on the haute cuisine podium.
